Guest Talk Series: Jason Ignacio White

Jason Ignacio White, fermentation scientist and former head of the renowned Noma fermentation lab in Copenhagen (2017–2022), shares insights from his unique journey at the crossroads of cooking, foraging, and microbial transformation. Trained as a chef, he has since led innovative projects worldwide, most recently developing experimental kombucha during a residency with Yardley Brothers in Hong Kong.
